I kind of love this…surprised?image

Halloween has to just about top Christmas for kids, don’t you think?  We had a Trunk or Treat event yesterday evening, and I mean, these kiddos have smiles from ear to ear.  Reaching in to a big bowl of candy just kind of does that for you…I can relate!

Landon was raring to go as was evidenced by his supper of about 347 pieces of candy.  So, we’re taking care of the cold/infection and subbing in a tummy ache.  Not really, his stomach actually handled it quite well, amazingly…

I just have to post this recipe that I seem to be the one who is most impressed by it.  Wait, I take that back…Steve LOVED it and called it a “keeper”.  And if low-carb is your thang…you will love this too.

White Pizza Dip

I got this off of Pinterest, but did my research (went back and looked at the reputable blog it came from to know) that this was going to be amazing.

1 pint Grape Tomatoes

Olive Oil (to toss tomatoes in)

Sea Salt and Pepper to add to tomatoes

Cut tomatoes in half.  Toss in olive oil, salt, pepper and roast at 400 degrees for 25 minutes.

Meanwhile…

1 1/2 blocks softened cream cheese

8 oz. shredded mozzarella

8 oz. shredded provolone

1/4 cup parmesan cheese

4 tsp. garlic (I used the squeeze kind from the tube–it is awesome!)

Fresh Basil and Oregano

Mix all above ingredients together and then adding roasted tomatoes.

Bake in small casserole dish at 350 degrees for 30 minutes.

Serve with crackers and veggies.

(Next time, I’m making breadsticks out of pizza dough)

I am seriously hooked on this recipe.  In fact, in may be served at each and every gathering, get together, and family reunion from now on.  Make it!  It’s delish…and not much fat—ha!  But hey–no carbs!
