a mindless day means…RECIPES!

Oh wow…what an awesomely fun day yesterday. And sometimes half the fun is trying new recipes. There are a few “tried and true” that I’ll fall back on every once in awhile. But for the most part? I am ALL OVER trying new things on people! This one trait of mine may put my Mother over the edge–as she doesn’t like to take a gamble when it comes to food. Ha! I am living on the edge!!

As my friend and I were talking yesterday, for the most part–you can look at a recipe and determine most of the time if it will be good or not. And I also take other’s words for it. Like this Banana Cake recipe my mom said was so good. After contemplating what I was going to do with my overripe bananas, she suggested this cake. And it turned out great!!! IF, you like bananas…

Banana Cake

(this recipe was sent via email from her friend, so I’m not sure where the exact reference is from.)

3/4 cup canola oil

1 1/2 cups sugar

2 eggs

2 cups flour

1/4 cup sour milk (add 1 tsp. vinegar to milk)

1 cup mashed bananas (I used 4)

1 tsp. soda

1 tsp. baking powder

1 1/2 tsp. vanilla

1 tsp. salt

Cream sugar and oil, add eggs and mashed bananas. Mix in other dry ingredients (I sifted the dry ingredients together) and add to creamed mixture. Add sour milk. Place in a 9×13 greased pan. Bake for 30-35 minutes at 350 degrees. Done when toothpick comes out clean. (I was right at 30 minutes—started checking at 25 min.)

Frost cake while it’s hot. I used a simple cream cheese frosting—1 stick REAL butter(softened), 1 8 oz. package cream cheese (softened), 2 cups powdered sugar, and vanilla—cream)

And this next recipe came from a good friend of mine who is an AMAZING cook and baker!! And she’s addicted to Pinterest as well. We were sitting at a basketball tournament and our conversation quickly changed to food and fun recipes! In between cheers, of course. And she had me at cake mix, peanut butter cups, sweetened condensed milk and EASY.
