Oh my goodness you all!  I had the absolute BEST time yesterday as Tonya at 4 Little Ferguson’s and the rest of the Weekend Potluck Gang–The Better Baker, Frugal Family Favorites, The Country Cook, and Sunflower Supper Club featured “The Fave” blogpost as the most clicked on recipe for last week.  Who knew that a simple baked steak recipe from my mom (GRANDMA’s BEST!!) would be the interest of so many?

I was equally as excited to hear of the many people who tried this recipe in the last week and breathed a sigh of relief that they loved it as much as we do.  (that always scares me when I try to give a recipe that really isn’t a recipe, you know?)

Anyway, I just wanted to give a shout out to all of you and welcome my new readers!! I am not necessarily a “foodie blogger”, but have had the best time participating in the Weekend Potluck each Friday.  It gets me to start thinking of our tried and true recipes we love in our family and also gives me a place to document them for future use.

Here is my mom with my youngest daughter, Kourtney. My mom, Cindy, is an amazing cook and baker and taught me how to make The Best chocolate chip cookies ever—no recipe needed—it’s been memorized since high school. The Grandma’s best baked steak, our Wedding Potatoes– which I hope to feature soon, cinnamon rolls, tator tot casserole, Poppyseed cake with the best cooked cream icing,  Sour Cream Raisin pie, Cream Cheese Bread, chocolate sheet cake,  and oh my…the list goes on and on.  Thanks Mom!!!

I have been blessed with many, many friends and family that share yummy recipes and I’m excited to share with all of you on Fridays at the Weekend Potluck!!

Hard Working LunchBox Smoothie

If you ever struggle when packing your kids’ lunches, this post is for you!!!

If you are even slightly as obsessive as I am about your kids’ lunches including a fruit and veggie, this post is for you!!!

If you get excited when Tonya has a Weekend Potluck, this post is for you!!

If you love to learn new tips on making your life easier, this post is for you!!!

If you want to jump up and down for joy that besides the fruit and veggie, you are also providing protein, calcium, and iron—well, then–this post is for you!!!

So…tell me.  Is this post for you???

First of all, I am going to give you the recipe for…

The Hard Working LunchBox Smoothie!!!

listed in the order to put in your blender or Vita-Mix (don’t know what a Vita-mix is?  Click HERE, it will change your life as you know it.)

1 cup Simply Orange Juice (or the juice of 2 oranges)

2 cups Fresh Spinach

1 Vanilla or Peach Chobani Yogurt (best greek yogurt ever—you choose flavor)

1 cup frozen Black Cherries (NO SUGAR ADDED)

1 cup frozen Mango (NO SUGAR ADDED)

Splash of REAL Vanilla

Sprinkle of Cinnamon

Blend all until smooth.

Now that you have seen the Vita-Mix and everything is blended perfectly smooth and there is no hint of green spinach anywhere to be found, you can pour into glasses for drinking right away…

OR

You can fill the small Ball freezer jars and freeze.

Now here is where your smoothie goes to work even harder for you. Keep in mind, it’s already providing a practically balanced meal for your Littles….

BUT, as a frozen smoothie, you can now use this smoothie as your cold pack in your child’s lunch.  By the time lunch time comes around, it is perfectly thawed and the rest of their lunch has been kept fresh.  It is the nifttest little thing.  And THAT is why it the Hardest Working LunchBox Smoothie ever!!

(smoothies are not limited to the ingredients listed above.  If you’d like it sweeter and want to provide some potassium—throw in a banana!  If you love all of the antioxidants of berries—grab strawberries, raspberries, and blueberries!  Need more protein?  Add in some nut butter of your choice.)

The possibilities are really endless.  Just don’t forget the spinach, Popeye.

Now, it is difficult to explain to you my mild obsession with this cookbook AND the Pioneer Woman herself.  It’s been ongoing.  For years.  In fact, I can barely remember when I hosted a Christmas Favorite Things party and gave all of my guests the very first cookbook.  I am in love.

So, tonight—we’ve got a little something special going on over here.  I’ll let you take a look at my centerpiece.  And hope to tell you all the yummy details in the morning.

As much as I love my job as a labor and delivery nurse, AND as much as I love my night shift girls, there is one dreaded night of the year when working night shift and I intentionally choose to NOT ever work it. Ever. Any guesses?

Yep. Nothing harder than when you look at the clock at 2 am and you turn it back one hour. No kidding. It’s hard. And I’ll be thinking of all you night shifters TONIGHT as I get an extra hour of sleep. Ouch—that wasn’t very nice, was it?!
