I did a HUGE email inbox clean out the other day, and came across this recipe from a friend of mine and decided right then and there, we would try them out. I have eaten them many times before so I knew they were good. But what I didn’t know was how EASY they are!!
2 Cups Flour
3 TBSP. Sugar
3 TSP. Baking Powder
1/2 TSP. salt
Mix together. Then add non-liquid ingredients below depending on the kind you choose to make.
Chocolate Almond Scones
1/2 Cup White Vanilla Baking Chips
1/2 Cup Semi-sweet Chocolate Chips
1 and 1/3 Cup Heaving Whipping Cream
1/4 TSP. Almond Extract
1 cup Powdered Sugar
1/4 TSP. Almond extract
2-3 TBSP milk or water
Cranberry Almond Scones
2 TSP Grated Orange Peel
1/2 Cup White Baking Chips
1/2 Cup Dried Cranberries, chopped
1/2 Cup chopped pecans
1 and 1/3 Cup Heavy Whipping Cream
1 Cup Powdered sugar
2-3 TBSP Orange Juice
Heat oven to 400 degrees. Lightly grease cookie sheet. Add whipping cream and extract to dry ingredients–stir just until dry ingredients are moistened. On a lightly floured surface, knead dough 6-7 times until it pulls together. Divide dough in 3 parts. Pat each into a 6 inch disc; cut each into 6 triangles. Place two inches apart on cookie sheet. Bake 10-13 minutes or until light golden brown. Cool 5 minutes. Mix icing ingredients to a nice drizzling consistency and drizzle over scones. For almond scones, top with sliced almonds if desired.

We have since been making scones almost daily. The combinations are endless! We did dried blueberries, chocolate peanut butter, and the list is full of possibilities. Let me know what combos you try! Warning: these do not keep. (as in, every one eats them up!)
